Meatloaf With A Bite

Tired of boring meatloaf? Try this salsa-loaf variation.

Ingredients

  • 1 pound ground beef
  • 1 ½ cups medium salsa
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded Monterey Jack cheese
  • 1 egg
  • 1 cup crushed saltine crackers

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan.
  2. In a large bowl
  3. mix together ground beef
  4. salsa
  5. cheese
  6. egg
  7. and cracker crumbs. Form into a loaf
  8. and place in prepared pan.
  9. Bake for approximately 1 hour
  10. or until done. Internal temperature should measure at least 160 degrees F (70 degrees C)
  11. the meat should be browned through
  12. and the juices clear.
