Maho, Vietnamese Chicken Recipe

Here is a very low cost and simple recipe for a great Vietnamese chicken recipe, Maho. It is something we eat on a regular basis, and my toddler likes it too, so you know it is yummy.

Ingredients

  • 2 cups uncooked white rice
  • 4 cups water
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 3 skinless, boneless chicken breast halves – cut into bite-size pieces
  • 2 tablespoons soy sauce, or to taste
  • ½ cup dry-roasted, unsalted peanuts
  • 4 large leaves of iceberg lettuce
  • 1 (11 ounce) can mandarin oranges, drained

Cook Time: 30 mins

Total Time: 45 mins
