Low-Carb Mashed Cauliflower

Description

For those of us low-carb peeps who like to pretend that we are eating mashed potatoes. Serve with butter if desired.

Ingredients

  • 1 head cauliflower, cut into florets
  • ½ cup whipped cream cheese
  • 2 cloves garlic, minced
  • 1 teaspoon seasoned salt (such as LAWRY’S®), or to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook cauliflower in boiling water until tender
  2. about 6 minutes; drain. Pat cauliflower dry with paper towel to remove as much moisture as possible.
  3. Blend cauliflower
  4. cream cheese
  5. garlic
  6. and seasoned salt in a food processor until mostly smooth.

Total Time: 20 mins
