Low-Carb Fauxtato Salad

Description

Low-carb cauliflower salad that tastes just like a standard potato salad; serve chilled or warm.

Ingredients

  • 1 head cauliflower, cut into bite-size pieces
  • 4 hard-boiled eggs, chopped
  • ½ cup mayonnaise, or more to taste
  • 2 tablespoons dill pickle relish
  • 2 tablespoons diced green onion
  • 1 tablespoon prepared yellow mustard
  • salt and ground black pepper to taste

Instructions

  1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower
  2. cover
  3. and steam until tender
  4. about 5 minutes.
  5. Mix cauliflower
  6. eggs
  7. mayonnaise
  8. dill pickle relish
  9. green onion
  10. mustard
  11. salt
  12. and pepper together in a bowl.
