Loaded Cheesy Cauliflower

Description

Loaded cauliflower is creamed with cheese, chives, and bacon bits.

Ingredients

  • 1 large head cauliflower, cut into bite-sized pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ¼ cup bacon bits
  • 3 tablespoons chopped fresh chives
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover
  3. and steam until tender
  4. 8 to 10 minutes. Drain and let cool 10 minutes.
  5. Combine mozzarella cheese
  6. sour cream
  7. mayonnaise
  8. 1/2 the bacon bits
  9. and chives in a large bowl. Add cauliflower; mix well. Pour mixture into a baking dish. Sprinkle remaining bacon bits and Cheddar cheese on top.
  10. Bake in the preheated oven until cheese is melted and golden brown
  11. 15 to 20 minutes.
