Little Traveler’s Salad

Description

My mother-in-law served this for the 4th of July. It was a great meal for a warm summer evening when you don’t want anything too warm.

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 (10 ounce) package baby spinach leaves
  • 1 small red onion, thinly sliced
  • 2 cups cooked macaroni
  • 12 ounces cooked chicken breast, cut into bite-sized pieces
  • 1 (12 ounce) jar roasted red peppers, thinly sliced
  • 8 slices cooked bacon, crumbled
  • ¼ cup poppy seed dressing, or to taste
  • ¼ cup French-fried onions, or to taste
