Lemony Caesar Salad Dressing

Description

This is a great Caesar dressing from a bed and breakfast in St. Simon’s Island, Georgia. It is the best I’ve had. Great with a grilled chicken breast on top. Make sure to use the extra light extra-virgin olive oil. Enjoy!

Ingredients

  • 3 cloves garlic, peeled
  • 3 anchovy fillets
  • 6 tablespoons grated Parmesan cheese
  • 1 cup extra light olive oil
  • ½ cup fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dry mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Place garlic
  2. anchovies
  3. Parmesan cheese
  4. olive oil
  5. lemon juice
  6. Dijon mustard
  7. dry mustard
  8. kosher salt
  9. and black pepper into a blender; cover and pulse several times to break up the garlic. Blend until dressing is smooth and creamy
  10. about 1 minute.
