Lemon Tabouli

Description

A large bag of lemons, and the mint right outside the kitchen door inspired me to create this dish.

Ingredients

  • 2 cups bulgur
  • 4 cups boiling water
  • 3 tablespoons olive oil
  • 2 lemons, zested
  • 2 lemons, juiced
  • ¼ cup chopped fresh mint
  • ¼ cup minced fresh parsley
  • salt and black pepper to taste
