Lemon Pepper Catfish

Description

This is the best way to cook catfish. If you love fish, you will just love this recipe.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup cornmeal
  • 1 tablespoon lemon pepper
  • 4 eggs
  • 6 (6 ounce) fillets catfish
  • ¼ cup margarine

Instructions

  1. Combine flour
  2. cornmeal and lemon pepper spice; set aside. In a separate bowl
  3. lightly beat eggs.
  4. In a large frying pan
  5. melt margarine over medium-high heat.
  6. Working one at a time
  7. dip filets in egg and dredge in flour until well coated. Cook in hot margarine
  8. turning once
  9. until brown on both sides. Drain briefly on paper towels and serve.
