Lemon Custard Filling

Description

A luscious lemon custard. The perfect filling for white, yellow or citrus cakes!

Ingredients

  • ½ cup white sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 2 egg yolks
  • ¾ cup water
  • ⅓ cup lemon juice
  • 2 tablespoons butter

Instructions

  1. Mix together sugar
  2. cornstarch
  3. and salt in the top of a double boiler over simmering water.
  4. Whisk water and egg yolks together in a small bowl. Pour egg yolk mixture into the sugar mixture
  5. whisking until fully incorporated. Cook
  6. stirring constantly
  7. until mixture thickens.
  8. Remove from the heat and stir in lemon juice and butter. Cover with plastic wrap and let sit until completely cooled.
