Leftover Salmon Melt

Description

I use this recipe when I have leftover baked salmon. If I do not think I will have enough for this dish, I add canned salmon. You can also add other ingredients to suit your taste: hard-boiled eggs, minced jalapeno, pickles, celery, etc.

Ingredients

  • 1 tablespoon butter
  • 1 onion, chopped
  • salt and ground black pepper to taste
  • 1 clove garlic, minced, or more to taste
  • 2 cups mashed cooked salmon
  • ¼ cup mayonnaise, or to taste
  • 2 tablespoons capers
  • 1 ½ tablespoons lemon juice, or more to taste
  • 1 tablespoon mustard
  • 1 tablespoon minced fresh parsley
  • 1 baguette
  • 1 tomato, sliced, or more to taste
  • ⅓ cup finely shredded mozzarella cheese
  • ⅓ cup finely shredded Swiss cheese
  • ⅓ cup grated Parmesan cheese

Cook Time: 10 mins

Total Time: 30 mins
