Kristen’s Parmesan Roasted Potatoes

Ingredients

  • 1 ½ pounds unpeeled potatoes, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon dried thyme leaves

Instructions

  1. Preheat an oven to 400 degrees F (200 degrees C).
  2. Place the potatoes into a mixing bowl
  3. and drizzle with olive oil. Sprinkle with kosher salt
  4. black pepper
  5. Parmesan cheese
  6. and thyme leaves. Toss to evenly coat
  7. and transfer to a 9×13-inch baking dish.
  8. Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork
  9. about 1 hour. Serve hot or at room temperature.
