Ingredients
- 1 ½ pounds unpeeled potatoes, cut into 1-inch chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese
- ¼ teaspoon dried thyme leaves
Instructions
- Preheat an oven to 400 degrees F (200 degrees C).
- Place the potatoes into a mixing bowl
- and drizzle with olive oil. Sprinkle with kosher salt

- Parmesan cheese
- and thyme leaves. Toss to evenly coat
- and transfer to a 9×13-inch baking dish.
- Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork
- about 1 hour. Serve hot or at room temperature.
