Kim’s Summer Cucumber Pasta Salad

This summery pasta salad recipe was given to me by my sister, Kim. It is my husband’s favorite side of the summer! Enjoy!

Ingredients

  • 1 (8 ounce) package bow tie pasta
  • 1 large cucumber, thinly sliced
  • 1 large onion, thinly sliced
  • 1 ½ teaspoons dried dill
  • ¾ cup white vinegar
  • 1 cup white sugar
  • 1 cup water
  • 1 tablespoon vegetable oil
  • 1 tablespoon prepared mustard
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta at a boil
  2. stirring occasionally
  3. until cooked through yet firm to the bite
  4. about 12 minutes. Drain and rinse several times with cold water until pasta is cool.
  5. Stir pasta
  6. cucumber
  7. onion
  8. and dill in a salad bowl.
  9. Whisk vinegar
  10. sugar
  11. water
  12. vegetable oil
  13. mustard
  14. salt
  15. and black pepper in a separate bowl until sugar and salt have dissolved. Pour dressing over pasta mixture and toss lightly to coat with dressing. Let chill for 2 hours before serving.

Total Time: 2 hrs 30 mins
