Description
Keto spinach squares. This is a great breakfast recipe for those on a low-carb or keto diet.
Ingredients
- 4 tablespoons salted butter
- 3 large eggs
- 1 cup almond flour
- 1 teaspoon baking powder
- 1 pinch ground nutmeg
- salt to taste
- 1 cup almond milk
- 2 (10 ounce) packages frozen chopped spinach, thawed and drained
- 1 (16 ounce) package shredded Monterey Jack cheese
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Place butter in a 9×13-inch baking pan
- and put in the oven to melt while preheating.
- Beat eggs in a medium bowl. Combine flour
- baking powder
- nutmeg
- and salt in another bowl.
- Add flour mixture to the eggs alternating with the almond milk. Stir in spinach and Monterey Jack cheese. Pour into the melted butter in the baking pan.
- Bake in the preheated oven until set
- 35 to 40 minutes.
- Remove from the oven and allow to cool for 45 minutes before cutting into 10 squares.
