Junked Up Kale Salad

Description

A salad for kale lovers and haters. Leftovers hold up well for about a day.

Ingredients

  • 1 bunch curly kale, stemmed and leaves shredded
  • 1 tablespoon olive oil, or as needed
  • ¼ teaspoon kosher salt, or as desired
  • 2 cloves garlic, peeled
  • ¼ teaspoon kosher salt
  • 1 ½ teaspoons olive oil
  • 2 cups walnut pieces
  • 1 lemon, juiced
  • 2 cups cooked wild rice
  • 2 apples (such as Gala or Pink Lady), diced
  • 1 cup dried cranberries
  • ½ cup shredded Italian cheese blend (such as Trader Joe’s® 4-Cheese Romano Blend)
  • ¼ cup sesame seeds
  • ¼ cup chia seeds
  • ¼ cup hemp seeds
  • ¼ cup flax seeds
  • 2 tablespoons bread crumbs
  • 2 tablespoons crumbled blue cheese, or to taste (Optional)
