Japanese Sweet & Savory Potato Bites

Ingredients

  • 1 ⅔ cups water
  • 1 ¾ cups Japanese soy sauce
  • ½ cup white sugar
  • ¾ cup tapioca flour (starch)
  • 1 tablespoon mirin (sweetened rice wine)
  • 6 frozen tater drums
  • 2 tablespoons vegetable oil
  • 1 cup thinly sliced cabbage
  • ½ cup small diced squid
  • 1 tablespoon dried fish flakes
  • 2 tablespoons mayonnaise
  • 1 tablespoon Japanese soy sauce
  • Roasted shredded seaweed

Instructions

  1. Teriyaki Sauce: In a pot
  2. boil water and add Japanese soy sauce until re-boiled. Add the sugar and mirin. Add the tapioca flour in small batches until thickened
  3. whisk smooth.
  4. Potato Bites: Preheat oil in a fryer or a deep pan to 350 degrees F. Fry tater drums according to packaging or approximately 3 minutes.
  5. In a skillet
  6. heat oil
  7. add the squid and cabbage. Saute with Japanese Soy Sauce until light-brown color
  8. place on the plate.
  9. Place the prepared tater drums
  10. followed by the 1/3 cup teriyaki sauce
  11. and mayonnaise on top of squid/cabbage plating. Then sprinkle fish flakes and seaweed. Serve.
