Italian Grilled Eggplant Caprese

Description

A variation on insalata Caprese with the addition of grilled eggplant–a great appetizer or vegetarian side for a summer barbecue.

Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon grated fresh garlic
  • ½ teaspoon salt
  • 2 small purple eggplants, cut into 1/2-inch slices
  • 1 tomato, sliced 1/8-inch thick
  • 1 (8 ounce) package fresh mozzarella, thinly sliced

  • 3 leaves fresh basil, cut into thin strips
