Irish Soda Bread with Raisins

Description

Love Irish soda bread with raisins with a good cup of tea or coffee. You can add an egg wash to the top of the bread and then sprinkle with sugar before baking, if desired.

Ingredients

  • 8 cups all-purpose flour
  • ¾ cup white sugar, or more to taste
  • 2 tablespoons baking powder
  • 2 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 ¼ cups buttermilk
  • 1 cup butter, softened
  • 2 eggs
  • 1 ½ cups raisins

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Mix flour
  3. sugar
  4. baking powder
  5. baking soda
  6. and salt together in a bowl. Add buttermilk
  7. butter
  8. and eggs. Knead together with your hands or use an electric mixer; add raisins. Split dough in half and form into 2 loaves. Place on the prepared baking sheet.
  9. Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean
  10. about 45 minutes.
