Irish Soda Bread I

Description

This recipe was given to me by my mother, Agnes Walters. It is made with sour cream and always comes out moist and keeps for several days.

Ingredients

  • 4 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 eggs
  • 1 pint sour cream
  • 1 cup raisins

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease two 8×4-inch loaf pans.
  2. Mix flour
  3. sugar
  4. baking powder
  5. baking soda
  6. and salt. Add sour cream
  7. raisins
  8. and eggs; mix until just combined. Distribute batter evenly between the prepared pans.
  9. Bake loaves in the preheated oven for 1 hour.
