Hot Breakfast Couscous

Description

When I went on a 6 day kayaking trip, our guides whipped this up one morning over the campfire. It was delicious and I started making it at home.

Ingredients

  • 2 cups skim milk
  • 2 tablespoons honey
  • 3 teaspoons ground cinnamon
  • 2 cups dry couscous
  • ⅓ cup chopped dried apricots
  • ⅓ cup raisins
  • ½ cup slivered almonds

Instructions

  1. Combine milk
  2. honey and cinnamon in a saucepan over medium heat. As soon as it comes to a boil
  3. stir in couscous. Turn off heat.
  4. Cover and let stand for 5 minutes. Stir in almonds
  5. apricots
  6. and raisins.

Prep Time: 5 mins

Cook Time: 5 mins

Total Time: 10 mins

Servings: 8
