Horseradish Potato Salad

Description

A creamy red potato salad with a zip of horseradish. An exciting change from the ordinary.

Ingredients

  • 2 pounds red potatoes, scrubbed and cubed
  • ¾ cup sour cream
  • ½ cup mayonnaise
  • ½ small red onion, chopped
  • 1 rib celery, finely chopped
  • 3 tablespoons white vinegar
  • 2 tablespoons prepared horseradish
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill weed
  • 1 teaspoon white sugar
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 hard-cooked eggs, chopped
  • 4 slices cooked bacon, crumbled

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender
  2. about 20 minutes. Drain and cool.
  3. Mix sour cream
  4. mayonnaise
  5. red onion
  6. celery
  7. vinegar
  8. horseradish
  9. parsley
  10. dill
  11. sugar
  12. salt
  13. and pepper together in a large bowl. Stir in cooled potatoes. Fold in eggs and bacon. Cover and chill until serving.
