Description
A creamy red potato salad with a zip of horseradish. An exciting change from the ordinary.
Ingredients
- 2 pounds red potatoes, scrubbed and cubed
- ¾ cup sour cream
- ½ cup mayonnaise
- ½ small red onion, chopped
- 1 rib celery, finely chopped
- 3 tablespoons white vinegar
- 2 tablespoons prepared horseradish
- 1 tablespoon dried parsley
- 1 teaspoon dried dill weed
- 1 teaspoon white sugar
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 4 hard-cooked eggs, chopped
- 4 slices cooked bacon, crumbled
Instructions
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender
- about 20 minutes. Drain and cool.
- Mix sour cream
- mayonnaise
- red onion
- celery
- vinegar
- horseradish
- parsley
- dill
- sugar
- salt
- and pepper together in a large bowl. Stir in cooled potatoes. Fold in eggs and bacon. Cover and chill until serving.
