Description
Standard energy bites recipe kicked up with the addition of protein powder and chopped coffee beans and coconut. Super pre- or post-workout snack. Store balls in freezer or fridge and thaw for use.
Ingredients
- 2 cups rolled oats
- 1 cup peanut butter
- ⅔ cup honey
- ½ cup dark chocolate chips
- ½ cup ground flax seeds
- ½ cup chocolate-flavored protein powder
- ½ cup unsweetened shredded coconut
- 2 tablespoons chia seeds
- 1 teaspoon coconut extract
- ¼ cup chopped coffee beans
- 2 tablespoons cocoa powder (such as Fry’s®), or more as needed
Instructions
- Mix oats
- peanut butter
- honey
- dark chocolate chips
- flax seeds
- protein powder
- coconut
- chia seeds
- and coconut extract together in a large bowl; fold in coffee beans. Form mixture into 1-inch balls.
- Place cocoa powder in a small bowl. Roll each ball in the cocoa powder until coated.
