Herbed Chickpea Salad

Description

Quick and tasty little chickpea salad. Allowing the salad to chill in the fridge for a couple of hours before serving really melds the flavors together.

Ingredients

  • 1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed
  • ΒΌ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons lemon juice
  • 4 teaspoons extra-virgin olive oil
  • 1 clove garlic, minced
