Description
A Mexican restaurant I used to go served this dish. I came up with what I think is their recipe or close to it. It’s awesome and a different take on traditional chicken salad. Can be served with crackers, tortilla chips, or on bread as a sandwich.
Ingredients
- 4 cooked chicken breast halves, chopped
- 1 (15 ounce) can pineapple chunks, drained
- 1 cup coarsely chopped walnuts
- 1 large cucumber, chopped
- ½ cup mayonnaise
- salt and ground black pepper to taste
- 6 bowl-shaped taco salad shells
Instructions
- Mix chicken
- pineapple chunks
- walnuts
- cucumber
- mayonnaise
- salt
- and black pepper in a bowl. Serve in taco bowls.
