Healthy Chicken and Spinach Panini

This is my own personal recipe, I was trying to think of a quick and easy but healthy meal for myself. It’s very fresh and tasty, and it’s a great warm chicken panini for a cooler day!

Ingredients

  • 1 (4 ounce) skinless, boneless chicken breast half
  • 2 teaspoons lemon juice, divided
  • 1 pinch garlic powder, or to taste
  • 1 pinch Italian seasoning, or to taste
  • salt and ground black pepper to taste
  • ½ medium onion, thinly sliced
  • 2 tablespoons chopped roasted red pepper
  • 1 teaspoon minced garlic
  • 1 cup fresh spinach
  • 2 slices whole wheat bread
  • 1 slice reduced-fat Cheddar cheese

Prep Time: 15 mins

Cook Time: 20 mins

Total Time: 35 mins
