Healthier Southern Peach Cobbler

Description

This healthier version lets you enjoy sweetness from the peaches, not added sugar.

Ingredients

  • 8 fresh peaches – peeled, pitted, and sliced into thin wedges
  • 2 tablespoons brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup whole wheat pastry flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • ¼ cup boiling water
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Combine peaches
  3. 2 tablespoons brown sugar
  4. 1/4 teaspoon cinnamon
  5. nutmeg
  6. lemon juice
  7. and cornstarch in a large bowl. Toss to coat evenly
  8. and pour into a 2-quart baking dish.
  9. Bake in the preheated oven for 10 minutes.
  10. Meanwhile
  11. combine flour
  12. white sugar
  13. 1/4 cup brown sugar
  14. baking powder
  15. and salt in a large bowl. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in water until just combined.
  16. Remove peaches from oven
  17. and drop spoonfuls of flour mixture over them.
  18. Mix together 2 tablespoons brown sugar and 1 teaspoon ground cinnamon. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden
  19. about 30 minutes.
