Healthier (but still awesome) Awesome Slow Cooker Pot Roast

Description

This is a very easy recipe for a delicious pot roast, I make it healthier by omitting the onion soup mix, using low-fat and low sodium cream of mushroom soup, and adding vegetables!

Ingredients

  • 2 (10.75 ounce) cans low-fat, low-sodium condensed cream of mushroom soup
  • 1 large onion, chopped
  • 3 pounds chuck roast
  • 2 cups sliced carrots
  • 1 pound small red potatoes
  • ½ pound string beans
  • ¼ cup chopped parsley

Instructions

  1. Mix cream of mushroom soup
  2. chopped onion
  3. and chuck roast in a slow cooker.
  4. Cook on Low for 8 to 9 hours or High for 3 to 4 hours. Add carrots
  5. potatoes
  6. string beans
  7. and parsley 1 1/2 hours before pot roast is done.

Prep Time: 10 mins

Cook Time: 8 hrs

Total Time: 8 hrs 10 mins

Servings: 12
