Description
This is a very easy recipe for a delicious pot roast, I make it healthier by omitting the onion soup mix, using low-fat and low sodium cream of mushroom soup, and adding vegetables!
Ingredients
- 2 (10.75 ounce) cans low-fat, low-sodium condensed cream of mushroom soup
- 1 large onion, chopped
- 3 pounds chuck roast
- 2 cups sliced carrots
- 1 pound small red potatoes
- ½ pound string beans
- ¼ cup chopped parsley
Instructions
- Mix cream of mushroom soup
- chopped onion
- and chuck roast in a slow cooker.
- Cook on Low for 8 to 9 hours or High for 3 to 4 hours. Add carrots

- string beans
- and parsley 1 1/2 hours before pot roast is done.
