Hawaiian Green Papaya Salad

Description

This is my own version of a local favorite, papaya salad. It is wonderful to take to potluck or other gatherings, because it gets better with a few hours of resting time. ‘Tis very nice with fresh ahi sashimi, brown rice, and a glass of icy Gewurztraminer. The sweetness of the wine softens the heat of the salad. Serve garnished with edible flowers or roasted sesame seeds.

Ingredients

  • 2 medium (blank)s red bell peppers, chopped
  • 1 large tomato, cut into wedges
  • 1 large cucumber, cubed
  • 3 tablespoons coconut vinegar
  • 3 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sea salt
  • 4 medium green papaya, peeled and cut into chunks
  • sea salt to taste
