Halibut with Vegetables

Description

Halibut baked with fresh parsley, olive oil, garlic and vegetables. I made this for a dinner party and everybody loved it!

Ingredients

  • 2 pounds halibut fillets
  • salt and pepper to taste
  • ¼ cup olive oil
  • ½ cup chopped fresh parsley
  • 1 yellow onion, thinly sliced
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 1 (16 ounce) can diced tomatoes
  • 2 tablespoons capers
  • 4 cloves garlic, minced

Prep Time: 15 mins

Cook Time: 20 mins

Total Time: 45 mins
