Grilled Peanut Chicken

Description

This is a perfect dish when you have company coming and no idea what to fix them, especially when you don’t want to be boring about dinner.

Ingredients

  • 2 tablespoons reduced fat peanut butter
  • 1 tablespoon fresh lime juice
  • 2 teaspoons soy sauce
  • 1 clove garlic, chopped
  • ⅓ teaspoon curry powder
  • 1 dash ground cayenne pepper
  • 4 skinless, boneless chicken breast halves

Instructions

  1. Preheat an outdoor grill for medium heat and lightly oil the grate.
  2. Mix peanut butter
  3. lime juice
  4. soy sauce
  5. garlic
  6. curry powder
  7. and cayenne pepper together in a bowl.
  8. Place chicken onto the preheated grill. Brush 1/2 of the sauce over chicken and cook for 6 to 8 minutes. Turn chicken and brush with remaining sauce. Continue cooking until no longer pink in the center and the juices run clear
  9. 6 to 8 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
