Tender halibut marinated in fresh citrus and spices is cooked atop the flames inside a foil packet and served on a bed of greens layered with all of the classic taco fillings and a creamy avocado dressing.
Ingredients
- 1 large avocado, peeled and pitted
- 1 cup plain yogurt
- 2 medium cloves garlic, chopped
- 2 tablespoons lime juice
- 1 tablespoon honey
- ½ teaspoon salt
- ¼ teaspoon pepper
- 4 (6 ounce) halibut fillets
- 1 medium lime
- 1 teaspoon ground cumin
- salt and pepper to taste
- 8 cups romaine lettuce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup shredded Colby-Jack cheese
- 1 cup diced tomatoes
- 1 ½ cups tortilla strips
