Makes a great grilled chicken Caesar salad with a definite bite to it. You can use less garlic and anchovies if you prefer a milder flavor.
Ingredients
- ½ cup freshly shredded Parmesan cheese, divided
- ¼ cup olive oil
- ¾ (2 ounce) can anchovies, drained
- 4 cloves garlic, minced
- 1 large egg
- ½ medium lemon, juiced
- 1 tablespoon red wine vinegar
- ¼ teaspoon Worcestershire sauce
- ¼ teaspoon dry mustard
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- ⅛ teaspoon prepared horseradish
- 1 pound skinless, boneless chicken breasts, cut into bite-size pieces
- 1 head romaine lettuce, shredded
- ½ cup Caesar salad croutons
