Green Tomato and Bacon Soup

Description

This is a great way to use the green tomatoes at the end of the season. Freezes really well! I recommend serving it with a nice crusty bread.

Ingredients

  • 8 slices bacon, cut into bite-size pieces
  • 1 small red onion, chopped, or more to taste
  • 3 cloves garlic, minced, or more to taste
  • 5 cups chopped green tomatoes
  • 3 cups vegetable broth
  • ½ teaspoon celery salt, or more to taste
  • 1 bay leaf, or more to taste
  • freshly ground black pepper to taste

Instructions

  1. Place bacon in a stockpot over medium-low heat; cook and stir until bacon begins to brown
  2. about 5 minutes.
  3. Add onion and garlic; cook and stir until onion is tender and bacon is crispy
  4. about 5 to 7 minutes.
  5. Add green tomatoes
  6. vegetable broth
  7. celery salt
  8. bay leaf
  9. and black pepper; bring to a boil. Reduce heat and simmer until tomatoes are tender
  10. about 40 minutes.

Cook Time: 55 mins

Total Time: 1 hr 10 mins
