Greek Watermelon Pizza

Ingredients

  • 1 center-cut slice of watermelon, about 1 inch thick
  • ¼ cup crumbled feta cheese
  • ⅛ cup diced tomato
  • 1 tablespoon Kalamata olives, pitted and finely chopped
  • 1 tablespoon chopped fresh mint

Instructions

  1. Cut the round watermelon slice into 6 to 8 wedges
  2. but keep them arranged into a circle.
  3. Sprinkle feta cheese

  6. and mint evenly over the watermelon. Serve immediately.
