Grandma Z’s Crunch Salad

Description

Lots of vegetables in a creamy curry dressing. Perfect side dish for a summer BBQ.

Ingredients

  • 1 pound bacon
  • 5 cups chopped broccoli florets
  • 2 cups grapes
  • 1 cup diced celery
  • 1 cup diced jicama
  • ½ cup chopped green onions
  • 1 cup mayonnaise
  • ¼ cup white sugar
  • 2 tablespoons vinegar
  • ½ teaspoon curry powder
  • 1 tablespoon pine nuts, or to taste

Instructions

  1. Place the bacon in a large
  2. deep skillet
  3. and cook over medium-high heat
  4. turning occasionally
  5. until evenly browned
  6. about 10 minutes. Drain the bacon slices on a paper towel-lined plate
  7. then crumble.
  8. Toss broccoli
  9. grapes
  10. celery
  11. jicama
  12. and green onions together in a large bowl.
  13. Whisk mayonnaise
  14. sugar
  15. vinegar
  16. and curry powder in a bowl until well blended.
  17. Pour dressing over vegetables and toss with crumbled bacon and pine nuts.
