Grandma Emma’s Spice Loaf

Description

A quick bread, moist and full of raisins and nuts. A family favorite for the winter holidays.

Ingredients

  • 1 cup hot, brewed coffee
  • ½ cup raisins
  • ½ cup shortening
  • 1 cup white sugar
  • 2 eggs
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chopped walnuts

Instructions

  1. Soak raisins in coffee until plump. Do not drain.
  2. Cream together the shortening
  3. sugar and eggs. Blend in molasses and vanilla.
  4. In a large bowl mix together the cinnamon
  5. nutmeg
  6. cloves
  7. ginger
  8. flour
  9. baking soda
  10. and salt. Make a well in the center of the bowl.
  11. Add the liquid ingredients to the well in the dry ingredients. Stir in coffee with raisins and nuts. Pour batter into a greased 9×5 inch loaf pan.
  12. Bake in a preheated 350 degree F(175 degrees C) oven for one hour.
