Gourmet Cream of Broccoli Soup

Description

Just enough for two people, easy to prepare, and freezes well. If freezing, do not add cream until ready to use.

Ingredients

  • 2 tablespoons butter
  • 1 onion, thinly sliced
  • 1 small potatoes, thinly sliced
  • 2 cups fresh chopped broccoli
  • 1 ½ cups chicken broth
  • ¼ teaspoon salt
  • ground black pepper to taste
  • ½ cup heavy whipping cream

Instructions

  1. Melt butter in pan
  2. do not brown. Add vegetables
  3. toss to coat with butter
  4. then press parchment paper on top of vegetables–this is called “sweating”– for better flavor. Put lid on pan and simmer very gently until vegetables have softened. Do not brown.
  5. Remove paper
  6. add chicken stock
  7. bring to a boil
  8. then simmer until vegetables are soft.
  9. Put in blender and puree until smooth. Pour back in pan
  10. add salt
  11. pepper
  12. and cream. Simmer gently
  13. do not boil or cream will curdle
  14. until heated through.

Cook Time: 30 mins

Total Time: 45 mins
