Gooey Vegan Chocolate Chip Cookies

These cookies are moist and delicious and also happen to be vegan!

Ingredients

  • ¾ cup coconut oil
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • ¼ cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ⅔ cup vegan white chocolate chips

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. Cream together coconut oil
  3. white sugar
  4. and brown sugar in a bowl using an electric mixer. Gradually add applesauce and mix to combine. Blend in vanilla extract.
  5. Combine flour
  6. cocoa powder
  7. baking powder
  8. and salt in a bowl. Gradually add flour mixture to the bowl with the coconut oil mixture and mix until batter is smooth. Fold in white chocolate chips.
  9. Roll dough out into 2-inch balls and place onto the prepared baking sheet.
  10. Bake cookies in the preheated oven until edges are crispy
  11. about 12 minutes.
