Gluten-Free Vegan Banana Bread Muffins

Ingredients

  • 1 cup gluten-free all-purpose flour mix (such as Bob’s Red Mill®)
  • ½ cup light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 ½ ripe bananas, mashed
  • ¼ cup applesauce
  • ¼ cup extra-virgin olive oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 8-cup muffin tin or line cups with paper liners.
  2. Combine gluten-free flour
  3. sugar
  4. baking powder
  5. cinnamon
  6. and salt in a large bowl.
  7. Mix bananas
  8. applesauce
  9. olive oil
  10. and vanilla extract in a separate bowl. Add banana mixture to flour mixture; mix well until smooth and creamy.
  11. Spoon batter into the prepared muffin cups
  12. filling each 2/3 full.
  13. Bake in the preheated oven until tops spring back when lightly pressed
  14. about 40 minutes.
