German Potato Salad

Description

This is a really good hot potato salad that my mother used to make for us. You can vary the amount of vinegar and sugar to change the taste around.

Ingredients

  • 4 potatoes
  • 4 slices bacon
  • 1 tablespoon all-purpose flour
  • 2 tablespoons white sugar
  • ⅓ cup water
  • ¼ cup white wine vinegar
  • ½ cup chopped green onions
  • salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add potatoes; cook until fork-tender
  2. 8 to 15 minutes. Drain.
  3. While the potatoes are cooking
  4. cook bacon in a large
  5. deep skillet over medium-high heat until browned and crispy
  6. 8 to 10 minutes. Remove bacon to a paper-towel lined plate
  7. leaving the fat in the skillet. Chop or crumble bacon when cool enough to handle.
  8. Add sugar and flour to the bacon fat
  9. then pour in water and vinegar. Cook over medium heat
  10. stirring any browned bits off the bottom with a wooden spoon
  11. until dressing is thick
  12. 3 to 5 minutes. Turn off the heat.
  13. Add potatoes
  14. bacon
  15. and green onions to the skillet and stir until coated. Season with salt and pepper.

Cook Time: 45 mins

Total Time: 55 mins
