Fruit and Fiber Energy Muffins

Description

They are dense muffins, kind of like an energy bar. If you eat oatmeal daily this is a great way to have it on the go. 2 muffins are equal to 1/2 cup oatmeal. Muffins should be refrigerated.

Ingredients

  • cooking spray
  • 3 cups rolled oats
  • 2 cups milk
  • 2 cups chopped apples
  • 1 ¼ cups raisins
  • 1 cup chopped walnuts
  • ¾ cup flaxseed meal
  • 2 eggs
  • 1 tablespoon ground cinnamon (Optional)
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Prep Time: 15 mins

Cook Time: 50 mins

Total Time: 1 hr 5 mins

Servings: 12
