Fried Mashed Potato Cakes

Description

Fried mashed potato patties. Yummy!

Ingredients

  • 1 cup leftover mashed potatoes, cooled
  • 1 egg
  • 2 ½ tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 1 tablespoon vegetable oil, or as needed

Instructions

  1. Mix together mashed potatoes
  2. egg
  3. flour
  4. and salt in a bowl until well combined.
  5. Heat a thin layer of vegetable oil in a frying pan over medium heat.
  6. Working in batches
  7. drop 1/6 of the potato mixture into the hot frying pan and flatten into a patty. Repeat to add more patties to the pan. Cook until browned
  8. about 3 minutes per side.
