Fresh Mushroom Rice Pilaf

Description

This version of mushroom rice pilaf uses fresh mushrooms, not canned. Add garlic if you like.

Ingredients

  • 2 teaspoons butter
  • 1 (8 ounce) package sliced fresh mushrooms
  • ¼ cup chopped green pepper
  • 2 tablespoons chopped onion
  • 1 ⅓ cups water
  • ⅔ cup white rice
  • 1 teaspoon chicken bouillon granules
  • ⅛ teaspoon salt
  • 1 pinch garlic powder
  • 1 pinch ground black pepper

Instructions

  1. Melt butter in a saucepan over medium heat; cook and stir mushrooms
  2. bell pepper
  3. and onion until tender
  4. about 5 minutes. Stir in water
  5. rice
  6. bouillon granules
  7. salt
  8. garlic powder
  9. and black pepper. Bring to a boil; reduce heat to medium-low
  10. cover
  11. and simmer until liquid is absorbed and rice is tender
  12. 14 to 16 minutes.
