Fajita Buddha Bowl

Description

This is a quick, easy, and tasty lunch to pack for work for the week. Each recipe makes 2 Buddha bowls! Top each with 2 tablespoons of hot sauce of your choice.

Ingredients

  • 1 teaspoon coconut oil
  • 1 cup frozen bell peppers
  • 1 cup frozen corn
  • salt and ground black pepper to taste
  • 2 cups refried beans
  • 2 cups cooked brown rice
  • ΒΌ cup guacamole

Instructions

  1. Heat coconut oil in a skillet over medium heat; add frozen bell peppers
  2. frozen corn
  3. salt
  4. and black pepper. Cook and stir until heated through
  5. 5 to 7 minutes.
  6. Divide refried beans
  7. brown rice
  8. and bell pepper-corn mixture evenly between 2 bowls. Top each with 2 tablespoons of guacamole.
