Easy Roasted Peppers

Description

This is a really basic way to roast peppers for use in any recipe. Choose any color peppers you like, or use a variety of colors for a beautiful presentation. After they are roasted you can add an oil and balsamic dressing, or fry in olive oil and garlic to serve with crusty bread.

Ingredients

  • 6 red bell peppers

Instructions

  1. Preheat the oven to 500 degrees F (260 degrees C).
  2. Cut peppers into quarters. Remove and discard stems
  3. seeds
  4. and membranes. Place skin-side up in a baking dish.
  5. Roast in the preheated oven until the skin blisters and turns black
  6. 30 to 40 minutes.
  7. Remove from the oven and transfer peppers to a bowl. Cover with plastic wrap or a tea towel and let sit until cool enough to handle and skins peel away easily
  8. 20 to 30 minutes.
  9. Peel and discard skins.
