Easy Potato Pancakes

Description

My family loves these as a side dish or for Sunday brunch. Delicious topped with sour cream and green onions or applesauce.

Ingredients

  • 5 potatoes, peeled and shredded
  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 3 tablespoons all-purpose flour
  • salt and pepper to taste
  • 3 tablespoons vegetable oil

Instructions

  1. In a large bowl
  2. stir together potatoes
  3. eggs
  4. onion
  5. flour
  6. salt and pepper.
  7. In a large skillet
  8. heat oil over medium high heat. Drop large spoonfuls of the potato batter into the skillet and flatten cakes slightly with a spatula. Cook for about 4 minutes on each side
  9. until golden brown. Serve immediately.
