Easy Egg Tacos

Description

Serve these fun and easy tacos with your favourite toppings for the full taco treatment that kids love.

Ingredients

  • 2 teaspoons vegetable oil
  • ½ small red or green pepper, diced
  • ½ jalapeno pepper, seeded and finely diced
  • 1 clove garlic, minced
  • ⅔ cup diced ham
  • ½ teaspoon chili powder
  • 4 large eggs eggs
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoons butter
  • 4 small whole wheat or regular flour tortillas, warmed
  • ½ cup shredded Tex-Mex or Cheddar cheese
  • 2 each green onions, chopped
  • ¼ cup salsa
  • 1 tablespoon chopped fresh coriander

Instructions

  1. Heat oil in a medium nonstick skillet over medium heat. Sauté red bell pepper
  2. jalapeño pepper
  3. and garlic until softened
  4. about 2 minutes. Add ham and chili powder; sauté until heated through
  5. about 2 minutes. Remove ham mixture to a bowl; cover to keep warm.
  6. Whisk eggs
  7. salt
  8. and pepper in a small bowl or measuring cup.
  9. Melt butter in the same skillet over medium heat; add eggs and cook
  10. stirring gently
  11. until set but still soft
  12. about 2 minutes.
  13. Spoon eggs onto each tortilla. Top with ham mixture
  14. cheese
  15. and onion. Serve with salsa and coriander.
