Easy Beef Enchiladas

Ingredients

  • 2 pounds ground beef
  • ¼ cup chopped onion
  • 2 cups shredded Cheddar cheese, divided
  • ½ cup sour cream
  • 1 tablespoon taco seasoning
  • 1 pinch salt and ground black pepper to taste
  • 2 ½ cups red enchilada sauce
  • 1 ½ teaspoons chili powder
  • cooking spray
  • 1 (10 ounce) package flour tortillas
  • 1 (15 ounce) can black beans, rinsed and drained (Optional)
  • 1 (6 ounce) can sliced black olives, drained (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch casserole dish with cooking spray.
  2. Cook and stir ground beef and onion in a skillet until beef is browned and crumbly
  3. 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese
  4. sour cream
  5. taco seasoning
  6. and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce
  7. chili powder
  8. and salt.
  9. Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish
  10. seam-side down. Spoon any leftover sauce
  11. black beans
  12. and olives over the tortillas. Sprinkle remaining cheese over the top.
  13. Bake in the preheated oven until cheese is melted and filling is bubbling
  14. about 20 minutes.
