Early Morning Oven Roasted New Potatoes

Description

Simple, yet delicious! These potatoes, when young, are so good by themselves they don’t need anything else. This would be great as a breakfast side dish.

Ingredients

  • 1 ½ pounds new potatoes, cut into wedges
  • 4 tablespoons butter
  • 2 teaspoons fresh rosemary
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C).
  2. In a hot skillet
  3. melt butter. Stir in rosemary
  4. salt
  5. and pepper. Add potatoes and coat potatoes evenly with melted butter.
  6. Arrange potatoes in a single layer on a baking pan.
  7. Bake in the preheated oven until potatoes are golden brown
  8. 20 to 25 minutes
  9. tossing them occasionally to ensure that they brown on all sides.
