Dehydrated Beet Chips

Description

Beets are crisped in the dehydrator or oven to make crunchy, delicious, and versatile chips. Try playing with the flavors of these chips: smoked bacon salt? sesame-tamari? Anything goes!

Ingredients

  • 3 large beets, assorted colors
  • ¼ cup water
  • ¼ cup apple cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon fleur de sel (sea salt flakes)

Instructions

  1. Peel and slice beets as thinly as possible with a sharp knife or mandoline.
  2. Combine sliced beets
  3. water
  4. apple cider vinegar
  5. and olive oil in a large bowl. Let marinate
  6. at least 10 minutes.
  7. Arrange beets in a single layer on food dehydrator trays. Sprinkle fleur de sel over beets. Store any beets that don’t fit in the refrigerator.
  8. Dehydrate according to manufacturer’s instructions
  9. 8 to 12 hours.
